1 turkey breast
3-4 flour tortillas
1 fresh mango
2-3 cloves of garlic
a handful of fresh basil leaves
a handful of a mixture of different salads
salt and pepper
§ Cut the turkey breast into strips, then rub the stripes with crushed garlic cloves and place into a oven-proof dish.
§ Sprinkle the meat with a pinch of cinnamon. Add chopped chives and basil leaves. Season all with salt and pepper, lime juice and olive oil.
§ Put in the oven to about 230 degrees C and bake for 10-15 minutes.
§ Peel and divide the mango into 2 sections. Cut one of the halves into strips. Slice the other half into pieces, combine with the remaining chopped chives and mix with a blender. Add juice of 1/2 lime and mix thoroughly.
§ Spread the mango mixture on one side of the tortilla, then add a handful of fresh leaves of various lettuces, roasted turkey chunks and stripes of mango.
§ Wrap the tortilla as tight as you can and cut crosswise into 3 parts.
Note: Before wrapping tortillas, place them for a moment in the oven. This will make the wrapping easier. Be careful though to note leave them there for too long. Otherwise they’ll get hard which will lead to the exact opposite effect.
